Sweet Green Dressing and Veggie-Full Salad Recipe


Who else out there is hungry, but picky? With school back in full swing and work still being, well, work–finding something to eat between classes or Zoom sessions can be unfulfilling to say the least. Here is a veggie-licious salad recipe to fill you up, satisfy that craving, and leave you feeling (and looking!) good for the next video chat.

You can prep all the toppings for this salad recipe ahead of time and store them separately in the fridge. In the morning or even right at lunch, throw together any combination you like! It’s like having your own in-home salad bar. Yum!

What you’ll need for the salad recipe:

Mixed Spring Greens

Roma Tomatoes

Roasted Carrots


Artichoke hearts

Pitted Kalamata Olives

Red Onion

Feta Cheese

What you’ll need for the Sweet Green dressing:

1 good handful fresh basil

2 tablespoons chopped onion

1 good handful fresh flat leaf parsley

2 tablespoons honey

2 tablespoons mustard

1 tablespoon apple cider vinegar

1/2 teaspoon ground pepper

pinch of sea salt

4 tablespoons extra virgin olive oil


Throw all the ingredients through the sea salt into a blender and blend on high just until everything is combined. Now turn the blender speed to low and slowly pour the olive oil in while the blender is going to emulsify everything.
