Summer’s heat and humidity eventually get to me. Feeling sticky and sweaty loses its novel charm and my mind starts wandering to fall. It almost feels sacrilegious actually, summer is my favorite season! Thankfully the desire to cool down and cozy up hasn’t begun to set in this year and I’m going to do my best to keep it at bay. My general plan, try to remain present and continue to enjoy the summer fruits of the season. And I mean that figuratively, al fresco activities, getting to wear cute dresses, more sunshine, and literally, in the form of this easy recipe that makes a versatile fruit topping out of in-season produce. It’s stone fruit season people! I used plums in this recipe, but peaches, nectarines, cherries anything you can get your hands on will work deliciously.
Easy Stone Fruit Compote
- 10 small, ripe plums (or 5 normal sized ones) or other summer fruits
- 1 tablespoon honey (more if your plums aren’t quite ripe)
- juice from 1/2 lemon
- 2 tablespoons water
- 1 cinnamon stick
Rinse and pit your summer fruits and roughly chop. Add your plums and any juice that escaped while chopping to a medium saucepan or pot. Add the rest of the ingredients and give everything a good stir. Heat over medium high heat until bubbling, then lower the heat to medium low and allow to simmer (stirring occasionally) for 15-20 minutes, or until the mixture becomes a bit syrupy. Allow to cool and transfer to a serving dish if you’ll be using immediately or store in the fridge for up to five days. Enjoy your compote on waffles, layered in a parfaits, on top of ice cream or toast, generally anywhere fruit makes sense, so does this topping.
