Vegan Recipes For Going Meat Free, Hassle Free

There’s never been a better time to opt for a more plant-based and vegan lifestyle than right now during COVID-19.

Why?

Not only is it incredibly easy to make vegan meals, cooking vegan is also one of the best ways to consume necessary vitamin-rich nutrients to keep the coronavirus at bay. On top of all that, it’s cost-effective and a lot of vegan ingredients can be found in cans, jars, or in the frozen section. 

Here’s a super simple, yet incredibly delicious, vegan recipe featuring jackfruit that incorporates non-perishable canned foods that shouldn’t be too difficult for you to locate!

Jackfruit is rich in vitamin A, vitamin C and potassium – all three of these nutrients are vital to your health in general, but they’re also fantastic immune system-boosters.

One-Pot Jackfruit Chili

*Choose organic when available, non-BPO cans, glass jars, boxed or bagged items

1 can, 20oz jackfruit in water (Trader Joe’s has a great one!)

1 purple onion, roughly chopped

2 20oz cans fire roasted tomatoes (opt for BPO free and organic when available)

1 4oz can diced green chilis

1 can of any other veggie of choice: green beans, corn, hominy, carrots

2 15oz cans of beans: pinto, navy, kidney or black beans

1 tbsp garlic powder 

1 tbsp chili powder

2 tsp smoked or regular paprika 

1 tsp paprika

2 tsp cumin

2 cups low-sodium vegetable broth

juice of one lime

1 tsp sea salt

1 tsp pepper

1 tbsp maple syrup or agave 

Optional: 1 tsp liquid smoke for a BBQ chili flavor or ½ to 1 tsp red pepper chili flakes for extra heat

Instructions:

  1. Drain the jackfruit and pull it apart with a fork. You want it to resemble shredded beef or pulled pork. 
  2. Add everything to a slow cooker or crockpot. 
  3. Cook on high for 3-4 hours or overnight for 6-8 hours.
  4. Top with shredded green onions, vegan cheese or vegan non-dairy almond yogurt as sour cream. Some of my favorite brands are Kite Hill and Follow Your Heart!
  5. Also, you can fill tortillas with the chili. Some suggestions are Mikey’s cassava flour, Siete Family Foods (various options) or Ezekial’s sprouted corn tortillas.

 3 Non-perishable Vegan Snacks:

  1. Canned or jarred hearts of palm – high in manganese, fiber and protein, this uncommon snack is a great choice for bosting your immune system and keeping your blood sugar in check
  2. Canned, pickled, jarred beets – great for fighting inflammation, increasing digestion, and lowering blood pressure
  3. Dried Medjool dates or figs – both are high in essential minerals, antioxidants and fiber
