We all love holiday cookies. But, why not embrace the entire winter season! These Spiced Shortbread & Blackberry vegan cookies can be enjoyed before, during and after the winter holidays. They are made with lots of spices. So, they’ll be sure to warm you from the inside out. With this delicious grain-free and vegan cookie recipe, winter has never been cozier.
Ingredients
Makes 12 cookies
- 1-1/2 Cups Almond Flour
- 1/2 Cup Cassava Flour
- 1/3 + 1 Tbsp Coconut Oil
- 1 Tsp Vanilla Extract
- 1/4 Cup Maple Syrup
- 1 Tsp Cinnamon
- 1 Tsp Ground Ginger
- 1/2 Tsp Nutmeg
- 1/4 Tsp Salt
- Blackberry Jam/Preserves (for filling the thumbprints)

Vegan Spiced Shortbread Cookie Recipe Directions
Add all of the ingredients through the salt to the bowl of an electric mixer. Mix until very smooth, for at least five minutes (this is different from traditional shortbread in which you only mix all of the ingredients together until just combined). Once the dough is well mixed, place your bowl in the fridge and chill for 30 minutes.
Meanwhile, preheat your oven to 350˚ Fahrenheit. Next, line a baking sheet with a silpat mat or parchment paper. Once chilled, remove your dough from the fridge and start scooping spoonfuls (about two tablespoons worth). As you scoop each cookie, mold it into a circular cookie shape. Then, use your thumb to make a print as you place each cookie onto the lined pan. Continue until you’ve used all the dough.
Bake cookies for seven minutes, then remove from the oven. Next, add a small scoop of blackberry jam into the indentation of each cookie. Bake for another 7-10 minutes. Don’t let your cookies burn. The cookies will still be very soft when you remove them from the oven, but will firm up as they cool.
