The Perfect Weeknight Pizza Crust Recipe

Homemade pizza crust for busy weeknights

Weeknight cooking can certainly be a chore. This weeknight pizza crust recipe is perfect for after work and after school. Make pizzas with the family or a delicious dinner for one. This simple and delicious recipe will have you wanting pizza every night!

To start, whisk together the warm water, yeast and sugar. Set it aside for five minutes to activate the yeast. You want it to start getting foamy. In the bowl of your mixer, add the flour, olive oil, salt and seasonings. When the yeast mix is ready, pour that in as well and using the dough hook attachment on your mixer, mix until a smooth dough has formed. Give it at least five minutes. While the dough is mixing, preheat your oven to 400 ̊F. Put your pizza pan in the oven to preheat as well.

If you do not have a mixer, mix all of the dough ingredients together in a large bowl with a wooden spoon until they begin to come together, then turn the dough out on a floured surface. With oiled hands, knead the dough until it’s nice and smooth. Sprinkle in more flour if needed. Once the dough ball has formed, sprinkle a little flour onto your clean counter or large cutting board. Take the dough out of the mixing bowl and knead by hand for a few more minutes. Sprinkle more flour in as necessary to help with any stickiness. Put your ball of dough into a greased bowl, cover and allow to rise for 20 minutes (it helps to place it close to your preheating oven). While your dough is rising, prepare any toppings you want.

After 20 minutes, dump your Pizza crust dough out onto a floured surface and knead a few more times sprinkling in a little more flour if needed to get rid of any remaining stickiness. Divide your dough into two. Place one hunk aside and roll the other one out onto the floured surface. If the dough is really resistant to rolling (meaning it springs back a lot) let it rest for about five minutes and try again. Take the hot pizza pan out of the oven (don’t forget your oven mitts) and CAREFULLY slide your crust onto the pan. As quickly as possible, top your pizza with desired sauce, cheese, pizza toppings and place in the oven for 15ish minutes. If you can manage it, allow the pizza a few minutes to cool before sliding it off the pan to cut and serve.

Repeat with the remaining dough. Music, drinks and dancing are all encouraged during the pizza-making process!

  • I’ve successfully used all-purpose flour, whole wheat flour and 00 pizza flour with this recipe.
